Another day to share amazing recipe with you all- Vegan Sweet Potato Kyiv! This is one delicious potato, make sure to make it at home.
You will need:
sweet potato, whole grain bread, parsley, olive oil, lemon juice, garlic, red onion, thyme, white beans, spinach, salt, black pepper.
Recipe:
Preheat the oven to 200°C (395°F) and line a baking tray with parchment paper. Use a fork to all over prick the sweet potato, place on the prepared tray and roast, turning once, for 50 minutes or until tender. Process bread in a food processor until coarse crumbs form. Transfer to a bowl and stir through chopped parsley (leave some for garnish), lemon juice, ⅓ minced garlic and half of the olive oil. Set aside. Meanwhile, heat remaining oil in a pan over low heat. Add finely chopped onion and cook, stirring, for 6-8 minutes or until softened and light golden. Add chopped thyme, remaining garlic and cook, stirring, for 1 minute or until aromatic. Add rinsed canned beans and cook, stirring, for 2 minutes. Add baby spinach and stir until just wilted. Remove from heat and season with a small pinch of salt and ground black pepper. Cut a slit in the baked potato, mash the flesh lightly with a fork and spoon the onion mixture into the slit. Place on the baking tray. Sprinkle with the breadcrumb mixture. Bake for another 10 minutes or until golden. Serve with parsley leaves on top and enjoy!
